A stamp of quality for 'Nice cookery'
Salade niçoise, stuffed vegetable, pissaladières (onion pizzas), pan bagnat (salade niçoise sandwich)… 15 kinds of Nice cookery specialties enjoy a stamp of quality from now on. The Alpes-Maritimes UDOTSI (regional union of tourism offices) has registered at the INPI (National Institute for Intellectual Preservation) a stamp of quality 'Cuisine Nissarde, le respect de la tradition' (Nice cookery, respect of tradition).About forty restaurants, from gourmets to simple ones have already received the stamp of quality.
